Red Beans and Rice

Red Beans and Rice (My own thrown together recipe)

2 cans red kidney beans
4 cups water
2 chicken boullion cubes
1 small onion
2 cloves garlic minced or finely chopped
4 oz diced ham (I just use the packaged Hormel 1/2 bag)
1-2 tsp black pepper (depending on how spicy you want it)
1/2tsp - 2 tsp cayenne pepper (again depends on how spicy you want it)
3 TBSP - real bacon (I use the prepackaged real bacon by Oscar Meyer that you find by the bacon bits. It is kind of pricey but oh so much better than cooking and crumbling it yourself and it is about the same price and buying a package of bacon.
1 tsp salt
1 TB dried parsley
1/2 tsp dried thyme

Pour altogether in a pot and let simmer and serve over rice

(this is actually a bit on a thinner side (almost soup) if you want it thicker like the picture cut 1/2 the water out, that or cook it longer. (we do it both ways) If you use dried red kidney beans you will of course want to soak them 8 hours over night and then I would cook the whole thing longer. Like an hour although with canned you can cook it in 20 minutes.

I don't usually make it with sausage like the picture but you can use smoked sausage instead of the bacon. I also like to throw in some chopped green pepper in there every now and again.

German Pancakes

These are "real" German pancakes. Not the puffy ones that you learn to make in high school's homeeconomics class. LOL! I give it ♥♥♥♥ but my kids would give it ♥♥♥♥♥ they are always asking for these. We eat them with strawberry's or peaches or bananas and syrup and cool whip.

German Pancakes

1 1/2 cups all purpose flour
1/2 tsp salt
1 TB sugar
2 TB oil or melted butter
1/2 tsp baking powder
1/2 tsp vanilla or almond extract
2 eggs
2 cups milk

Mix well but it will be slightly lumpy.

In a medium sized skillet put about a TB oil and coat the pan evenly. Pour enough batter in the pan (about the size of a tennis ball (or just a tad bit more) and then pick up the pan and manuever it until the batter coats the entire pan place back on the burner and cook about 1 1/2 minutes on medium high. Flip and cook for another 30 seconds to a minute. Remove and repeat with remaining batter. You can make them as thin as crepes but then they would be crepes. German pancakes are generally thicker than crepes.

You can eat these several ways. Just roll up and drizzle with syrup of choice or powdered sugar. You can also eat with applesauce. Our family prefers to put cool whip in them and serve with bananas, strawberries or peaches drizzled with maple or boysenberry syrup. YUM! You can also eat them for dessert with ice cream.
