Red Beans and Rice

Red Beans and Rice (My own thrown together recipe)

2 cans red kidney beans
4 cups water
2 chicken boullion cubes
1 small onion
2 cloves garlic minced or finely chopped
4 oz diced ham (I just use the packaged Hormel 1/2 bag)
1-2 tsp black pepper (depending on how spicy you want it)
1/2tsp - 2 tsp cayenne pepper (again depends on how spicy you want it)
3 TBSP - real bacon (I use the prepackaged real bacon by Oscar Meyer that you find by the bacon bits. It is kind of pricey but oh so much better than cooking and crumbling it yourself and it is about the same price and buying a package of bacon.
1 tsp salt
1 TB dried parsley
1/2 tsp dried thyme

Pour altogether in a pot and let simmer and serve over rice

(this is actually a bit on a thinner side (almost soup) if you want it thicker like the picture cut 1/2 the water out, that or cook it longer. (we do it both ways) If you use dried red kidney beans you will of course want to soak them 8 hours over night and then I would cook the whole thing longer. Like an hour although with canned you can cook it in 20 minutes.

I don't usually make it with sausage like the picture but you can use smoked sausage instead of the bacon. I also like to throw in some chopped green pepper in there every now and again.
